Postville 4-H Cooking Club and FoodCorps Iowa service member Claire Anderson used purple potatoes from the school garden in a roasted potato, cauliflower and carrot soup! The 2017 report, just published, benchmarks Iowa with other states and the nation. The publication is especially helpful to organizations and advisory groups that contribute to Healthy Iowans 2017-2021: Iowa’s Health Improvement Plan along with many others committed to improving health outcomes for all Iowans. The Postville Cooking Club baked pumpkin muffins using the pie pumpkins they harvested from the school garden this Fall. The Postville 4-H Garden Club transitioned to Cooking Club for the late Fall and Winter months. The elementary-aged students harvested 212 pounds of pie pumpkins from the school garden in September, and the Postville kitchen staff steamed and froze the squash for the school lunch program. Students enjoyed using the vegetables they tended all Summer and Fall in a sweet treat this November. Continue reading
